Ingredients

Baked Avocado Fries

  • 1 avocado, sliced
  • ½ cup breadcrumbs
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • 3-4 tablespoons aquafaba (chickpea liquid)

Instructions

  1. Preheat your oven to 400 °F/200 °C and line a baking sheet with parchment paper.
  2. Toss breadcrumbs with salt and spices in a shallow bowl and place the aquafaba in another shallow bowl.
  3. Coat avocado slices individually in aquafaba and then in the breadcrumb mixture.
  4. Place them next to each other on your prepared baking sheet without overlapping.
  5. Bake in the preheated oven for 20 minutes until golden brown and crispy on the outside!
  6. Serve warm with mayo, hummus, salsa or dip of choice.
